译文
精美的盘中嫩葱都是一寸来长，精致的宝刀切割好了羊肉。不敢埋怨羊肉腥，因为这是你亲手为我烹调的。
温暖的火炉映着酒醉的脸庞，乘着酒醉，把身上的毛皮大衣脱掉。我踏着京城里的街道，在这回去的路上仍然带着几分醉意。
注释
玉盘：盘子的美称。
寸断葱芽：《资治通鉴》卷四十五载，东汉陆续以楚王英事系狱，其母自吴来洛阳，作食以馈续。续对食悲泣不自胜，治狱使者问其故，续曰：“母来不得见，故悲耳。”问何以知之，续曰：“母截肉未尝不方，断葱以寸为度，故知之。”
鸾刀：刀环有铃的刀。
羊肩：羊腿。
进：献上。
腥躁：泛指生肉的气味。
红炉：烧得很旺的火炉，此当指火锅。
赪（chēng）素面：使素面变红。赪，红色。素面，不施脂粉之天然美颜。
貂裘：貂皮制成的衣裘。
缓：宽松，此指把外衣脱下。
天街：京城街道。

菩萨蛮·玉盘寸断葱芽嫩创作背景
1906年，作者在北京受到了一个女子热情的款待，涮羊肉的美味不仅让作者惊喜，大快朵颐的进餐方式也激发了作者的豪兴，于是创作该词。

菩萨蛮·玉盘寸断葱芽嫩鉴赏
第一句和第二句，作者在开头一句就用了古代的典故以赞美对方的手艺并略免轻供保薄之嫌。洁净如玉的盘中摆着又白又嫩的葱段儿，首先就给人一种精雅漂亮的印象；“寸断葱芽”令人联想到女性做事之有规矩、有尺度。细切“羊肩”，体现了女主人礼貌待客之道。
第三句和第四句，进餐中带有情义，寄情于伊人之“亲手”，突出了对女主人的尊敬之意。
第五、六句，写当炉喝酒进餐的豪情，体现了词人晚餐的愉快和宾主间的融洽，人物刻画细致，见神态。简体字中将“面”、“麺”并为一“面”字，在表述和传达方面造成许多误会和混淆，实甚不当。此处“素面”因“红炉”而微微泛红（“赪”），越发显得娇媚。此处只是表达了作者吃得高兴的意思。
最后两句写“归路”兴且不浅。从那个“馀”字可以看出，作者所要强调的还不是归路上的狂而是酒宴上的狂；这个“狂”字，暗地里有一种模仿魏晋士人那种不拘礼法的作风之意。从“红炉”的室内走上“踏霜”的“天街”，这里边便有了一种从暖到寒、从醉到醒的感觉，而这种寒冷与清醒的感觉，正好成了刚才晚餐时那种耽溺与任纵之情绪的一个反衬。
词中作者欲为男子制作一幅风俗素描，便借女子的双眼作为观察点，串起所要表达的景象，这叫爱情线索，符合作者那瑰丽温馨的词风要求。
